A twist on an Italian classic using Japanese Koshihikari rice. Blended in with fresh baby spinach, peas and parmesan. Enjoy it as a side or even as a healthy meal!
Ingredients: Koshihikari Rice, Vegetable Stock, Brown Onion, Peas, Baby Spinach, Grated Parmesan, Butter, Parsley, Garlic, Extra Virgin Olive Oil, Salt, Black Pepper.

Poaching: Heat a pot of water, enough to cover the packet. Once the water had boiled carefully place packet into the pot, when the water is boiling again place lid on the pot and turn off heat. Poach for 4-5 mins
Microwave: Cut a hole in the packet, place the risotto on a plate and microwave for 3-4 mins or until piping hot.
Serves one adult as a main or 2 adults as a entree with sides.
